Chicago Architecture Foundation. Entertain your party guests with a private Chicago Architecture Foundation tour during a cocktail hour. Entertaining Company's Classic Salmon Bite: 1 European (seedless cucumber) sliced into 1/2 inch wheels (approx 12 slices). 1/2 lb smoked salmon. 2oz Cream cheese. 2oz Ricotta cheese. 1 oz fresh dill. Zest and juice of 1 lemon. 2 pinch of salt and pepper. -- Slice cucumbers and lay out on a paper towel. Sprinkle salt and pepper on cucumber and let sit for 5 minutes. In a bowl, combine cream cheese, ricotta, dill, lemon zest and juice, and remaining salt and pepper. Arrange salmon on cucumbers and place cream cheese ricotta mixture on salmon. Garnish with fresh dill and serve.
